Sweet and smoked homemade barbecue sauce (barbecue sauce)

I always feel exciting when I learn how to make a common condiment at home. When it’s something I use a lot and it’s always over, like honey mustard, is even more satisfying.

Recently, I was going to make ribs and I ran out of barbecue sauce. Instead of taking a trip to the store, I took a trip to the kitchen. It took me a while to modify, but I’m happy with the result. And now I can use it to do it Barbecue chicken nachos!

The anatomy of a barbecue sauce

Most people know that barbecue sauces vary by region and personal preferences. There is the type of sweet, thick smoke that originated in Kansas City and the thinnest type of vinegar in the Carolinas. More details here.

Most barbecue sauces contain tomato sauce (or ketchup), mustard, and vinegar, as well as extra spices, and sometimes something for sweetness. Mine is very much based on tomato and apple sauce. I add a good amount of vinegar and balance with a variety of spices. Some people use liquid smoke (a substance in bottled smoked water) to get the smoky taste of barbecue sauce, but I prefer to use smoked red pepper.

The beauty of it is that you can customize it to your liking. My recipe doesn’t quite fit into any category. It is quite thick, a little sweet, a little spicy and has a good vinaigrette. I suggest you make, taste and adjust until you get a sauce you like.

Making barbecue sauces and condiments at home

Over the years I have switched to many homemade condiments. I did it gradually, adding one here and one here. I think I would have been overwhelmed if I had switched to the homemade cold turkey. But since I added one by one, it has become second nature to have a number in the fridge.

I think there are two really useful kitchen equipments for making condiments. The first is a good supply of pint-sized pallet jars with lids. They are ideal for shaking, mixing and storing. The second is one immersion mixer (stick mixer). This one has extra attachments, so it’s perfect for mashing, beating and chopping.

Make sweet, smoky, spicy barbecue sauce at home with common ingredients that are likely to be in the closet or refrigerator.


  • In a medium saucepan, beat all ingredients except water.

  • Put it on low heat over medium heat, beating occasionally.

  • Reduce heat to low, cover and simmer for about 15 minutes until flavors blend, beating every two minutes.

  • Let the sauce cool and store in the fridge.

  • Add water if necessary and use as you would any barbecue sauce.
