I present you my favorite salad of all time! When our garden produces strawberries, I eat this salad as much as I can. I like it so much that I even ate it for breakfast with eggs next to it!
This salad is not only beautiful to look at, but easy to make and kids love it too.
Simple strawberry feta salad
This salad was a day I was inspired by for seasonal offers from my garden and the market of our local farmers. I topped fresh spinach with sliced strawberries and cucumber and tossed some toasted nuts on top. I usually use pecans and cashews, but you can really use whatever you have on hand.
When my garden ran out of fresh strawberries and spinach one day, I made the trip to the market of our local farmers and discovered a new vendor selling homemade, raw, grass-fed cheese. Yes please! I decided to try all kinds … because of the cheese!
He hadn’t used the fact too much before and wasn’t sure what to do with it. But I thought, in case of doubt, I would throw it over a salad. So I did. And it was delicious.
Don’t need salad dressing?
In my opinion, the fresh, bright flavors do so much for this salad that you only need a drizzle of olive oil. Not my whole family agrees. Some of them love dressing, so I let them choose theirs. I make my own salad dressings, so we usually have a variety on hand. Some of our favorites are:
If you’re the most successful guy (like me) and have five more minutes, you can make your own homemade dressing … maybe strawberry vinaigrette?
Salad recipes provide a great starting point for personalization. For this, of course, you can use any type of green salad or a mixture of several types. If you don’t have any handmade, maybe some mozzarella cubes? Or if you like the strongest cheeses, some Parmesan or blue cheese.
Strawberries are pretty vital to the recipe, but you can substitute raspberries for a bit.
Strawberry and feta salad
A light and delicious salad of spinach with feta, strawberries, cashews and cucumber.
Place the spinach on a large plate or in a bowl.
On top, crumbled, sliced strawberries and cucumber and nuts.
Drizzle with olive oil.
Enjoy and repeat!
Add the cooked chicken for a full meal.
