If you need an easy recipe for seasonal cookies one random afternoon (when you find that as magic you have enough time to bake something), then I have what it takes for you!

These simple pumpkin cookies with chocolate chips take less than 30 minutes to make and are the perfect fall cooking project for any skill level (including tired moms keeping an eye on their baby throughout the process, lol ).

Another that pumpkin puree, there are really no special ingredients in this recipe. For me, as someone who cooks quite often, I have pretty much all of these ingredients on hand, as these are things I always have. If you never do, you may feel different. But there are no “weird” ingredients in this recipe – it’s very basic and delicious.

If you want to use pumpkin puree, and no pumpkin pie mix. Pumpkin puree is simply pumpkin (without other ingredients like sugars or spices). The pumpkin pie mix is ​​just a couple of shy pumpkin pie ingredients, and while that’s great, it’s not what we want for this cookie recipe.

You’ll notice how this recipe only requires one cup of pumpkin puree, which is about half a can. What do you do with the other half? Maybe do these pumpkin cupcakes. Or you can stir it in one chili recipe, or even mix it with your dog’s food (we do all this at my house). There are many ways to take advantage of leftover pumpkin puree!

This pumpkin cookie recipe with chocolate chips is no longer dairy, but if you want to try making it vegan, you’ll have to substitute the egg. You can easily replace the egg in this recipe with a flax egg or a chia egg, which is just ground flax seeds o Chia seeds mixed with a little water.

I like to use semi-sweet chocolate chips when I make these cookies. But you can use dark chocolate, chunks of chocolate, mini chocolate chips, milk chocolate or even exchange them for walnuts or chopped raisins.

If you use chocolate chips, I also recommend that they be opened flaky sea salt before baking. I love the combination of chocolate and salt!

  1. In a bowl, combine pumpkin, white sugar, brown sugar, vanilla and egg.

  2. In another bowl, mix the flour, yeast, salt, and cinnamon.

  3. Combine wet ingredients with dry ones and stir until a thick dough forms.

  4. Stir in the chocolate chips.

  5. Prepare a baking tray lined with parchment paper and lightly sprayed with non-stick spray.

  6. Place the cookie dough in the prepared baking tray. If you use it, add flaky sea salt.

  7. Bake in the oven at 350 ° F for 12 minutes.
