Another easy recipe to win! I was looking for an easy and quick fridge in the fridge lunch idea one day and I saw some leftover roast chicken. I tossed a few things together and this resulting pesto chicken salad was a hit!

Pesto chicken salad with artichokes and sun-dried tomatoes

Delicious doesn’t have to be elegant or take a long time. This pesto chicken salad basically consists of diced artichoke hearts and sun-dried tomatoes added to roasted or canned chicken. Add high quality fats to pesto rich in olive oil and you have a healthy, stuffed lunch or snack.

Tip: Dried tomatoes freeze very well. Freeze what you do not use in small portions or save what you have from the garden after drying. It is very nice to be able to grab a handful from the freezer and have a powerful flavor in the summer at any time of the year.

Serve this pesto chicken salad on a bed of salad vegetables, stirred in scrambled eggs for breakfast and on roasted cauliflower to get a fake pasta salad.

Side note: I do my own pesto and it freezes really well too! Also, I knew there were other pesto variations (I also make coriander pesto with pumpkin seeds), but the other day I found out that dried tomato pesto it’s one thing too. Let me know if you’ve tried it.

An easy meal with leftover chicken

I often cook extra chicken when I am preparing dinner. I love when I can grab already cooked chicken and throw it at something. Facilitates lunches and dinners. In fact, over the years I have developed many recipes that take advantage of this trick. Here are a few:


Pesto chicken salad recipe

A quick and easy but tasty chicken salad recipe with pesto, artichoke hearts and sun-dried tomatoes.


  • cups cooked chicken (or 1 whole chicken)
  • 12 oz artichoke hearts (sold out)
  • ¾ tax dried tomatoes
  • ½ tax pesto


  • Chop the chicken, artichoke hearts and tomatoes into evenly sized pieces.

  • Combine them all in a bowl.

  • Stir in the pesto and serve.


Try mixing toasted cauliflower to get a chicken paste salad with fake pesto.
