Ever since I really found out natural wine, non-toxic, I feel better about enjoying a glass in the evening to relax sometimes. There is a way to make wine even better and increase health benefits. Hot wine, like hot cider, is cooked over low heat with aromatic spices for a delicious, warm drink.
Drag yourself with a drink
There is nothing like taking a sip of mulled wine on a cool night. While it tastes good, taking a while to enjoy a drink is good for health in more ways than one. Take a moment to participate a little self-care reduces stress, helps the digestive system and lowers cortisol levels.
No need to drink mulled wine alone on the couch, but to see the mental and physiological benefits. It’s about having a positive mindset. Hot wine is also a great drink for when the company comes.
A cozy home
Our family likes to make apple cider in the casserole because it makes the house smell amazing! Hot cider does the same. Although the cooking time is usually shorter for wine than for cider, the smell of spices in the air is irresistible. This is a great drink to take out when the company is over, as it makes the home smell warmer and more welcoming.
Better cooking time
I browsed through several mulled wine recipes for inspiration and they all had one thing in common. They all had different cooking hours. So how long should you cook mulled wine? The answer is, it depends.
The longer it cooks over low heat, the more concentrated the flavors will be. However, the longer the wine boils, the less alcohol content there will be in the final drink. According to the Nutrient Data Laboratory of the U.S. Department of Agriculture, 40% of the alcohol is left after a slow cooking time of 15 minutes. If you want a little flavor to your wine, but don’t want to sacrifice too much buzz, 10-15 minutes is a happy medium.
A version with less alcohol
On the other hand, if you are trying to reduce the alcohol content and want a more intense spicy wine flavor, increase the cooking time. After an hour alcohol is reduced to 25% and after 2.5 hours there is only 5% left. However, after about an hour there is not much wine left to drink, as it can evaporate quite quickly. Longer cooking times also require stirring or the wine may burn. Personally I would not spend more than 30 minutes.
Choosing your species
You can buy premixed mulling spices or make your own. Ground spices are harder to strain, so it’s best to use whole or crushed spices here, such as cinnamon sticks and cloves. There’s a bit of room to experiment with which spices you like, but this is the recipe I liked the most.
Feel free to play with the ingredients to get your perfect blend of mulled wine.

You can prepare the spice bags in advance to use as you wish for recipes to save time. Or you can get premixed mulling spices. Wine is generally more acidic than cider (especially natural versions), so you can add honey if you prefer a sweeter drink.

Instant hot wine
I love my Instant Pot because it saves me a lot of time. You can make mulled wine in the instant pot, but it’s not necessarily a time saver for this recipe. And you miss your home with an amazing smell of spices. However, if you want to opt for the Instant Pot method, here it is two ways to do it.
- Add the ingredients to the pot, turn off the ventilation and cook for 1-3 minutes
- Add all the ingredients and use the slow cook button for about 2 hours.
