Have you ever tried making deep dish pizza in a cast iron skillet? It’s great, and you should try it. This cast iron paella pizza is very special.
It’s an extra deep dish cast iron pizza special because it has stuffed crust! I love the stuffed crust pizza – it has a little childish nostalgia to it.
I love to cook and bake with one large cast iron skillet. But if you’re still on the fence, here are some other recipes you can make:
This cast iron paella pizza dough recipe is very simple (see also the printable recipe card below):
2 1/4 teaspoons active yeast (one pack)
a generous pinch of sugar
1 1/4 cups warm water
2 tablespoons olive oil
3 cups flour
1 teaspoon salt
In a small bowl, combine water, sugar, and yeast. Let it sit and froth (also known as activation) for 10 minutes. In a larger bowl, combine flour and salt. Now add the yeast, water and oil until a thick dough forms.
Place on a floured surface and knead until the dough is elastic (5-6 minutes by hand, less if using a mixture). Place in a lightly greased bowl, cover and let stand in a warm place for 1 hour.
This will make a lot of dough for a large stuffed crust pizza. If you choose to use this dough recipe for a regular pizza (i.e. not a deep dish / stuffed crust), two pizzas will suffice.
When the dough is ready, lightly grease the bottom of the cast iron skillet. Roll out the dough (or toss it in the air if you’re talented) and place it in the pan. The edges of the dough should reach the sides.
Fold the cheese sticks to the edge of the crust.
Now add the sauce and cheese. I usually use about 1/2 cup of sauce and 1 cup of grated mozzarella cheese, in addition to any add-ons I’m using (such as mini pepperoni).
Additional points: Brush the crust with an egg wash and sprinkle with pizza sauce. I make pizza condiment by mixing some Italian condiment, garlic powder and red pepper flakes.
Place the entire pan in the oven at 375 ° F for 20-22 minutes. Carefully remove from the oven and allow to cool slightly before sliding the pizza on a cutting board.
