All but the Elote condiment is a quick and easy condiment mix that mixes the classic tastes of Mexican-inspired food with some Parmesan cheese.

Versatile and delicious, this homemade condiment mix will become a staple for adding lights to meats, vegetables and more. It only takes a few ingredients and they come together quickly. In a moment, you will have a mixture of condiments that will turn your food into a fabulous party.

This mixture can be used as a scrub for meat, seasoning for vegetables or as a mixture for cornbread. And, as its name suggests, you can add it to my classic elote recipe (street corn) for a fun and spicy dish. You will no doubt savor the flavor of this condiment and love how it can spice up your kitchen.

  • Cane sugar – It has more flavor depth than the granulate, but can be replaced by granular if desired.
  • Sea salt – Thick flakes are preferred for a slightly salty crunch.
  • Parmesan cheese – Grated to obtain a fine, almost powdery texture. (Be sure to omit Parmesan if you want to store everything except Elote condiment at room temperature in the pantry.
  • Chipotle powder – Adds a smoky flavor.

  • Cilantro sec – Adds the bright taste of coriander.

Variations

  • Remove the parmesan to get a dairy-free variety. It will also make the shelf stable for months.
  • Finely chop the fresh coriander to use instead of the dried coriander. Use it immediately instead of storing it.
  • Add a little cayenne to increase the heat.

Advices

  • Ground spices can last 1-2 years, while dried herbs can last 2-3 years. If yours is bigger than that, get some fresh ones that have the most intense flavor.

All but the Elote condiment is a bit spicy because it includes chipotle powder (which is made from roasted and smoked jalapeño peppers) and chili powder (which has cayenne peppers powder).

Why do you use this Parmesan cheese recipe?

Then add the Parmesan cheese to the amount you need each time you use it.
  • In the fridge – Store in an airtight container for up to four months in the refrigerator.
